Cold Brew

Equipment You Will Need:

Five pounds coarse ground coffee
4 Gallons cool filtered Water
5 Gallon (22 Quart) Toddy Brewer
Reusable Strainer
One-time use filter


  1. This should be made between 10:00 AM and 1:00 PM to ensure it is ready by the next day’s shift.
  2. Place the mesh strainer into the Toddy brewer and secure the bungee around the top of the bucket.
  3. Place the one time use filter bag into the strainer with the open end up.
  1. Place 5lbs of coarse ground coffee into the filter.
  2. Pour 2 gallons of cool filtered water into the open filter, making sure to saturate all of the coffee grinds.
  3. Tie the filter bag closed with the attached string. The string should be tied 3 inches from the top of the filter bag, leaving plenty of room for the coffee to move around.
  4. Add 2 more gallons of cool water to the brewing container.
  5. Cover with lid and let brew for 16-20 hours. This should be brewed at room temperature and not put in the refrigerator at this point.
  6. Lift grounds and filter from brewing container and let the water drain into the bucket. Rinse strainer and air dry. (Mesh Strainer is re-usable, filter bag is not re-usable). Throw away the filter bag and used grounds.
  7. This should yield approximately 3 gallons of concentrated cold brew. Place concentrated cold brew into pitchers with red tops and write the expiration date on the container. The expiration date will be 14 days from the time it was made. Concentrate must be refrigerated at this point. (note: if you can fit the entire bucket in your fridge, you do not need to portion the concentrate into pitchers).
  8. Cold Brew is a concentrate. It can only be served when it is diluted with water. DO NOT SERVE CONCENTRATE! Mix 1 part concentrate with 2 parts cool filtered water in a gallon pitcher to get the final product you will serve to customers. (Ex. Mix 1 quart concentrate and 2 quarts water to fill the pitcher with 3 quarts of total product).
  9. From this point, Simply pour over ice to serve. Customers may request cream and sugar or other ingredients that would typically be added to a traditional drip coffee.

  1. Add finished cold brew product to keg
  2. Make sure lid is properly sealed
  3. Attach keg to nitro generator
